Why honing and sharpening are different steps

Sharpening grinds the bevel back into a wedge, and honing refines or realigns the tip.

From the opening

Sharpening removes metal to put the bevel back into a real wedge, usually on a coarse stone, a belt, or a wheel. Honing is the later, finer step that polishes the apex or, with a butcher's steel, straightens a rolled tip without grinding the whole face away. The opening covers grinding rebuilds the bevel, a fine stone takes the burr, and a steel mostly realigns the tip.
